Bocas del Toro is the land of bananas, cacao, and COCONUTS! As I often use coconut oil in cooking, I wanted to learn how to make it from scratch. Willi offered to teach us one day…and so we did! First we shaved 50 coconuts, which included cuts on each of my fingers. Next, we squeezed the coconut shavings with water until coconut milk was extracted. This milk was then cooked in a paila over a wood-fire for 3 hours. During this time, the water evaporated until what was left was pure oil. After cooling for a bit, the oil was filtered and poured into jars. I use it for cooking, hair treatments, toothpaste, and bug bites.
